BBQ Pork Tenderloin with Mustard

This week, a simple recipe that is quite simply mouthwaterring.
The pork tenderloin is a piece of meat with exceptional qualities by its taste and tenderness. It is easy to find and fairly cheap to buy while producing a very impressive dish on the table.
As with all tender meat cut, you should avoid overcooking it which will tend to harden the soft flesh.
Adding a generous amount of Dijon mustard may be surprising but it must be remembered that the mustard will lose much of its flavor when cooked. The layer of mustard will mildly flavor the meat while protecting it from drying out during the first half of the cooking.
Pork tenderloin – 
Dijon mustard – [2 tablespoons] (30 ml.)
Salt & Pepper to taste
1- Let the meat stand at room temperature for 30 minutes.
2- Preheat the BBQ.
3- Salt the meat on all sides.
4- Spread all the Dijon mustard on one side.
5- Season generously with pepper on the mustarded surface.
6- Place tenderloin on the grill, with the mustarded side facing up.
7- Reduce the burners to a minimum. Cook 6-7 minutes with the grill cover closed.
8- Flip the meat and continue cooking for 6-7 minutes.
9- Remove from heat and cover with foil. Let stand 5 minutes before serving.
