Salmon and lime pie

The salmon pie is easy to prepare but is too often associated with a quickly done dish without much refinement.
We offer you a recipe that will let you see this dish in a new light.
Prepared using fresh salmon and flavored with herbs and citrus, this pie is sure to please and surprise.

Salmon and lime pie

Ingredients:
Salmon – [3/4 lbs.]  (340 g.)
Potato – [1 lbs.]  (454 g.)
Water – [3 cups]  (750 ml.)
Lemon – [1]
Laurel leaf – [2]
Black pepper – [1 tablespoon]  (15 ml.)
Fresh thyme – [1 tablespoon]  (15 ml.)
Onion – [1/4 cup]  (65 ml.)
Celery – [1/4 cup]  (65 ml.)
Eggs (large) – [2]
Green Onions – [4]
Lime (Juce and Zest) – [1]
Pie crust – [1]

Steps:
1- Preheat the oven to 350F (190C).
2- In a saucepan combine water, lemon (sliced), pepper, thyme and bay leaf.
3- Poach the salmon in this mixture (very gently with minimal heat).
4- In another saucepan cook the potatoes to be mashed.
5- When the salmon is cooked (approximately 15 minutes), remove from liquid and reserve.
6- Prepare the mashed potatoes and add the 2 eggs and green onions (sliced ​​thin).
7- Chop the salmon into large pieces and add to the potato mixture.
8- Add the juice and zest of a lime.
9- Salt and pepper to your taste.
10- Pour into the pie shell.
11- Bake 20-30 minutes.
12- Serve as is or with a sauce of your choice (white sauce with egg, tomato sauce or pesto mild herb).
