Mace flavored Apricots and Raisins pie

Lovers of dried fruit and dessert will be well pleased with this simple but tasty recipe.
The mix of raisins, apricots and the mace is a real pleasure in the mouth. Add a simple scoop of vanilla ice cream and you have a memorable and original desert.

The dried apricot is a product rich in fiber, but often seen as a bit bland. In this pie, slow cooking in a brown sugar syrup, aid develop the full flavor of this great little fruit.

Mace is a spice used primarily in pastry (donuts). This close relative of nutmeg (it grows around the core of the fruit of the nutmeg) mace flavor is similar but less pronounced than nutmeg.

Note: If you do not have a mace you can replace it with a little nutmeg powder (however, reduce the quantity by half)

Mace flavored Apricots and Raisins pie

Ingredients:
Pie crust – [1]
Dried Apricots  – [1 1/2 cup]  (375 ml.)
Dark Dried Raisin – [1/2 cup]  (125 ml.)
Brown Sugar – [1/2 cup]  (125 ml.)
Mace – [1/2 teaspoon]  (3 ml.)
Water – [1 1/4 cup]  (315 ml.)
Cornstarch  – [2 tablespoons]  (30 ml.)
Sliced Almond – [1/4 cup]  (65 ml.)
Egg  – [1]
White Sugar – [2 tablespoons]  (30 ml.)

Steps:
1- Preheat the oven to 350F (180C).
2- Cut 1/2 cup (125ml) apricots into small slices and mix with raisins.
3- In a saucepan, mix 1 cup (250ml) of water and all the brown sugar.
4- Add the apricots and raisins mixture from step 2.
5- Bring to a boil then add the freshly ground mace (or nutmeg).
6- In a small bowl stir together cornstarch and 1/4 cup (65ml) of water.
7- Pour into saucepan, stirring to mix well.
8- Cook over medium heat for 1 minute then remove from heat and let cool 30 minutes.
9- Halve the remaining 1 cup (250ml) of apricots into large thin slices.
10- Pour the contents of the saucepan into the pie shell.
11- Arrange the slices of apricots in a ring around the edge of the pie. Form a second ring with sliced ​​almonds. Using the last apricot slices to cover the center of the pie.
12- Bake 30 minutes.
13- In a small bowl beat the egg and the white sugar.
14- Pour this mixture over the apricots on the surface of the pie.
15- Return to oven for 15-20 minutes.
