Tex-Mex style meat pie

Who says Tex-Mex often refers to chili with corn, meat and, of course, red beans.
This “Tex-Mex” style meat pie incorporates all the required elements.

An original way to vary the menu with a hearty dish that is sure to become the favorite of the “real cowboys” of the house.

Tex-Mex style meat pie

Minced Onions – [1 1/2 cup]  (375 ml.)
Diced sweet Red peppers – [1 cup]  (250 ml.)
Minced Garlic cloves – [4]
Minced Celery – [1/2 cup]  (125 ml.)
Olive oil – [5 tablespoons]  (75 ml.)
Ground Beef – [1 lbs.]  (454 g.)
Minced Pork – [1 lbs.]  (454 g.)
Crushed Red Pepper – [1 teaspoon]  (5 ml.)
Corn kernels – [1 cup]  (250 ml.)
Red Kidney beans (can of 19oz, 540ml.) – [1]
Tomato paste (13 oz. can) – [1]
Red Pepper Sauce  – [2 tablespoons]  (30 ml.)
Salt & Pepper to taste
Pie crust – [2]

1- Prepare all the vegetables and rinse beans in cold water. Set aside.
2- In a large saucepan, heat oil over medium-high.
3- Cook the onions and celery for 2-3 minutes to soften.
4- Add the chili flakes and mix well.
5- Add corn and peppers. Cook 2 minutes, stirring.
6- Add meat to turn it brown (4-5 minutes).
7- Add the chilli sauce and tomato paste.
8- Mix well and adjust salt and pepper to taste.
9- Add kidney beans.
10- Simmer 2-3 minutes.
11- Divide mixture between pie crusts and cover with another.
12- Bake 50-55 minutes at 350F (180C).

    It sure is.
    Another way of making it is to use a favorite chili recipe ( just make sure to reduce the amount of liquid) as the filling.
