Green Tomatoes Muffins

But no, they were really delicious. The marriage of tomatoes with cinnamon and ginger is absolutely perfect.

Green Tomatoes Muffins

Ingredients:
Ground ginger – [1/2 teaspoon]  (3 ml.)
Ground Cinnamon  – [1/4 teaspoon]  (1 ml.)
Salt – [1/2 teaspoon]  (3 ml.)
Baking Soda – [1/2 teaspoon]  (3 ml.)
Baking Powder – [1/2 teaspoon]  (3 ml.)
Flour (all purpose) – [1 1/2 cup]  (375 ml.)
Eggs (large) – [1]
White Sugar – [1 cup]  (250 ml.)
Vanilla extract – [1/2 teaspoon]  (3 ml.)
Canola Oil – [1/2 cup]  (125 ml.)
Green Tomatoes – [1 cup]  (250 ml.)
Dark Dried Raisin – [1/2 cup]  (125 ml.)

Steps:
1- Preheat the oven to 350 F (180 C).
2- Grind the tomatos with a food processor. Set aside.
3- In a bowl, mix the ginger, cinnamon, salt, baking soda, baking powder and flour and set aside.
4- In another bowl mix the beaten eggs, sugar, vanilla, oil and green tomatoes.
5- Mix all ingredients and add the raisins.
6- Pour the batter into the muffin cups.
7- Bake for about 25 to 30 minutes.

    …Hi, am going to try making these today. Do I have to take seeds out of tomatoes before chopping them up?

    No need to remove te seeds unless they are really larges (Like in a bigBeef tomato) For most type of tomatoes the seeds will not create any problem.
