Dried fruits, maple and Yogurt Muffins

These muffins are both nourishing, energizing and delicious. They are also an excellent source of fiber and Omega 3.

Dried fruit, maple and Yogurt Muffins

Ingredients:
All Bran Cereals (wheat bran) – [1 cup]  (250 ml.)
Grounded Linseed – [3 tablespoons]  (45 ml.)
Flour (all purpose) – [1 cup]  (250 ml.)
Plain yogurt  – [1/2 cup]  (125 ml.)
Milk – [1/2 cup]  (125 ml.)
Canola Oil – [1/2 cup]  (125 ml.)
Eggs (large) – [2]
Maple syrup – [3/4 cup]  (190 ml.)
Vanilla extract – [1 teaspoon]  (5 ml.)
Salt – [1 teaspoon]  (5 ml.)
Baking soda – [1 teaspoon]  (5 ml.)
Baking Powder – [2 teaspoons]  (10 ml.)
Dried Cherries – [1/4 cup]  (65 ml.)
Dried Cranberries – [1/4 cup]  (65 ml.)
Champagne (Corinth) Grapes – [1/4 cup]  (65 ml.)
Sliced Almond – [1/4 cup]  (65 ml.)
Lemon Zest – [2 tablespoons]  (30 ml.)

Steps:
1- Preheat the oven to 400F (220C).
2- Mix cereal, ground flax seeds, yogurt, and milk. Let stand 5 minutes.
3- Add oil, vanilla, eggs, lemon zest and the maple syrup. mix well.
4- In another bowl sift flour, baking powder, salt and baking soda.
5- Stir into the first mixture.
6- Add the dried fruits and almons to the batter, mixing gently.
7- Pour into muffin cups.
8- Bake 20 to 25 minutes.
