Creamy Fudge

A little sin of gluttony, this creamy fudge will delight you.
Incredibly simple to prepare and so good in the mouth. It is excellent with a small-bodied espresso.
Note however, that this little treat should not be abused because of the high fat and sugar content.

Brown sugar – [1 cup]  (250 ml.)
White Sugar – [1 cup]  (250 ml.)
35% Cream – [1 cup]  (250 ml.)
Vanilla extract – [1 teaspoon]  (5 ml.)
Butter – [1 tablespoon]  (15 ml.)

1- Combine the brown sugar, sugar and cream in a deep,  microwave safe,  baking dish.
2- Boil 11 minutes in the microwave oven at high temperature.
3- Stir 2 or 3 times during cooking.
4- At the end of cooking, add the vanilla extract and butter.
5- Whisk until thickened. (It is important to stir the mixture during its cooling to prevent crystallization of sugar and thus obtain the desired creamy texture).
6- You can add 1 / 2 cup chopped nuts if desired.
7- Spread the mixture into a buttered pan.
8- Cool on the counter one hour and then at least 3 hours in refrigerator before cutting into squares.
