In this season, what better way to end the meal with a dessert that is as pleasant to the eyes as to the mouth.

4 cups of strawberries
1/2 cup of sugar
1 tablespoon of vanilla extract
1 teaspoon of freshly ground black pepper
2 cups of 15% cream
1/2 cup of red wine (table wine, preferably a strong one)

Assembly steps:
A sponge cake 1/2 inch thick or equivalent (optional).
1/2 cup of cream 35%
1 teaspoon of vanilla extract
1/4 cup of sugar
A few fresh mint leaves

1 – Wash, remove stems and slice the strawberries into pieces.
2 – Measure 3 cups of strawberries, reserve.
3 – Place the remaining strawberries (1 cup) in the food processor or blender and pulse for a puree.
4 – Add the sugar, vanilla, pepper and 15% cream to the strawberry puree and mix well.
5 – Add the red wine and mix well.
6 – In a large glass (or stainless steel) bowl, pour the strawberry pieces and cover with sauce.
7 – Mix gently so that all the strawberries are well coated with sauce.
8 – Cover and let rest in refrigerator for at least 2 hours.

9 – Using a cookie cutter or glass, cut circles of cake to a slightly smaller diameter than that of a service glass.
10 – Mix the 35% cream, the sugar, the vanilla and beat vigorously to get a nice whipped cream.

Mounting the verrines

11 – In each of the glasses, place some strawberry and sauce to fill up to 2/3.
12 – Place a circle of cake in each glass.
13 – Add more strawberries on the cake and slowly pour more sauce to cover the cake.
14 – Add a good portion of whipped cream.
15 – Garnish with a mint leaf.

16 – Taste and climb to heaven!
